Have had this in my garage for a few years now. Finally getting around to working on it. Insulated proofer being made into a sausage smoker.

The heat source is built in. Its a 1700 watt element.

There are 2 pans. One is going to be for wood and one liquids. If the wood pan does not put the smoke out like i want i will install a Bradley smoke generator or one of my smoke daddies.

Work? What work? You have a heat source, just a vent and some smoke and presto, Insant smoke cabinet. Looks like it'll be a dandy too!!!! and not just for sausage!

Very nice, that's gonna make a great smoker. A smoke daddy on that unit would be great then you should be able to run about any temp and still produce good smoke.
 
that's what i'm looking for.............be interesting to watch this one.
 
I think I know where I can get one of those either real cheap or for free. The county I live in consolidated some schools and each school had one of those exact units.  They have all of the kitchen stuff stored in a large garage as the new schools were built just prior to the consolidation with all new kitchen equipment.  I know all of the people at the school board offices and they owe me a favor.  I could store it in dad's garage and follow what you do.  It will make a nice addition to my New Master Forge 2 door LP gas smoker that I have not even got to try out yet due to cold weather. You guys think I should try to pick one of these animals up???  Looks like a rather minimal conversion if all works on it!  Just don't know what I would do with two working smokers but would love to try!

My friend said the school could not get it working and was going to toss it so he got it for me a few years ago. I have a video going to post later.

Today i worked on my smoker. I have to work on the rear wood pan and get it down closer over the element, It sits to high above it and with the blower going between the heat and pan it just dont get hot to smoke. So i used my amaze-n-smoker to season the inside some. Still some thing to do yet, stainless steel sausage bars, work on the top vent more and maybe hook up my smoke daddy.

Soon it will be ready for full on smoke.
 
I had a minor setback with the bottom chip pan not wanting to smoke. I think its the blower pushing air under the pan. Anyways i used another smoke device.

Cut 4 1 1/4" hardwood dowels for hanging on. Seasoned with smoke for 4 hours, tomorrow will give em 8 hours then its sausage time.

I'm getting close to being done on the proofer/smoker. Put some gunpowder in an old POS MES and blew the vent right off it. So a little drill and cut and hey new vent. Yes there is a bead of food grade high temp schmutz around both vent areas.
