Please refer me to a few good links about estimating pulled pork for large events. Maybe something that will help me decide how much I'll need, charge, etc.
Thanks

I have my first decent sized catering event coming up too (40 people). I currently am planning on using 4- 11lbs bone in butts. Is that enough or should i go a little bigger?

How are you serving it? Are you doing sandwiches or plates? How many sides are you serving with it and what are the size of the servings  for the meat? Lots of factors go into it

I am currently smoking about 35# of butt for a party this weekend - we are serving 70 folks with 3oz portions -- here is the math I used to calculate

35# uncooked = 17.5 cooked and trimmed = 280 oz % by 3oz and you get 93 servings

Since some will eat a second sandwich and some are kids I will have enough with serving potato salad and slaw with it - I will also have 5# of chicken just in case someone will not eat pork - This is for our 2 grandsons birthday on Sat but the math is the same no matter who its for.

I am just assuming that you have the means to handle the food safely and will be using sanitary gloves etc as required by your local health department

Hope this helps and let me know if you need anything else

like gary said there is a formula you can go by.....the one thing i would say is know your crowd. if they are "scarbelly" sized you might want to up yer portion size or just do what i did.........i pinned him against the wall with table so he couln't ge to the rest of the food!!!!!!!

Thanks a lot for the info. This is for a family BBQ and I will adjust my portions accordingly. I do have a few pounds of chicken for those who don't love the pulled pork...I may disown those family members. I have a couple side too coleslaw and smoked potato salad. Good luck with your smoke and thanks for the input.
