General Tso Chicken Wings

I like General Tso Chicken as a stir fry and decided to do a chicken wing version. 

I started off by mixing 
  • 15 ml (1 tbsp) rice vinegar
  • 25 ml (2 tbsp) soy sauce
  • 3 ml (1/2 tsp) sesame oil
  • 10 ml (2 tsp) water
  • 25 ml (2 tbsp) sherry
Then I added 
  • 2 ml (1/2 tsp) ginger
  • 5 ml (1 tsp) cornstarch
  • 35 ml (2 1/2 tbsp) sugar
and stirred until the sugar was dissolved.


I heated 8 ml (1 1/2 tsp) of oil in a small saucepan and added
  • 17 ml (1 tbsp) chopped green onion
  • 3 ml (1/2 tsp) minced garlic
  • 2 ml (1/2 tsp) crushed chillies
  • 5 ml (1 tsp) grated orange zest
and cooked for just a few seconds to get a strong smell. I stirred the liquid mixture to get the cornstarch mixed in and added it to the saucepan. I stirred and cooked until it was thickened and shiny. I removed it from the heat.


I tossed 12 chicken wing segments in 15 ml (1 tbsp) of oil.

Here is where there is a struggle in our household. I like a touch of crisp in my skin and for it to be bite through. She Who Must Be Obeyed likes a really crisp skin. When I am doing it for me, I smoke at 350 F for 25 minutes, turn them and smoke for 25 minutes longer. When I want them very crisp for SWMBO, I smoke them for 20 minutes at 375 F, turn and smoke for 20 minutes more. This smoke, I did the crisp ones for the missus.


I brought them in and put them in a large bowl.


I heated the sauce and tossed the wings in it. I put the wings and the sauce in a serving dish.

The Verdict

SWMBO really liked these. They have a sweet/sour sauce on a crispy skin. They only have a kiss of heat. She finds Scarbelly wings too hot and these just right. I prefer Scarbelly wings so I guess we will see both at our table!

Looks great Disco! I was just trying to decide how to marinate some wings and I just looked at my General
Tso recipe. Now I'm torn!

Oh man, why didn't I think of that. Sesame seeds would have added to the texture in a great way! Thanks for the idea and the point!

General Tso is one of my favorite flavors.  I'm definitely going to follow this recipe for a try, thanks Disco!  Point for the post and the flavor.  Your work to further the cause of converting to metric from imperial  is both recognized and appreciated :)
