It was a great weekend, Laura and I stopped at Sandy's for a Roast beef Sandwich...without the kids...this never happens, we made some awesome Stromboli's and a fantastic breakfast omelette, I played with my Hot Sauce a bit, Amanda and I cleaned the Turtle tank, I got the basement cleaned, Laura made a Peanut Butter cake and a Blueberry Pound cake for Dinner at my Parents Sunday and I got to spend Sunday evening with most of my Family.

Friday evening was nice, we both got a chance to relax,  Saturday morning I done a bit of house cleaning... trying to get the basement habitable again lol. It's been raining for about 5 days and everything is so wet, that any outdoor work would be impossible, I had intended to work on the ponds and clean up a bit more outside.

For dinner we were going to order out and I said lets just make a few Stromboli's, So to keep it simple we just made a few Bacon, Cheeseburger Stromboli's. We made 2 types a plain and one with peppers and onions, my Niece and Sister were coming over and we weren't sure if they had eaten, so we made plenty extra.

  • 80/20 is browned and drained.

  • Added some Beef Gravy Powder mix, (my secret ingredient) a pinch of oregano and a bit of Worcestershire.

  • Ketchup

  • Bacon is chopped, fried then mixed with beef. Bacon grease is drained and reserved. The beef, bacon mixture is split into two.

  • Onions are sautéed in the pan with bacon bits.

  • A can of diced tomatoes is drained.

  • Sautéed onions, drained tomatoes and chopped green peppers are added to mix #1

  • Mushrooms are added to mix#1.

  • About a cup of Mozzarella is added to both batches.

  • Each batch is mixed.

  • One of those tubed (roll out) pizza dough's are rolled out on a greased pan, cheese is placed on the dough.

  • Followed by the meat mixture...

  • ...and then some more cheese.

  • Each end is folded in then the top is folded over followed by the bottom, the seams are sealed tightly...

  • ...and then the dough is brushed with bacon grease.

  • Then into a preheated 400 degree oven for 20 minutes or so.

  • Then a twenty minute rest before slicing, there is so much stuff waiting to ooze out, that it's best to wait twenty minutes or so before slicing.

  • How was it? Pretty dam good, it was really tasty cold the next day as well.

  • Dinner was even better with Laura's top notch home made potato salad. She always says, "I wish my potato salad was as good as my Moms". Guess what...it's better!

  • Sunday morning my daughter and I had an awesome breakfast with the leftover Beef Filling, before we tackled the turtle tank.

  • A little bit of Sriracha Hot sauce my Sister brought over,Mmmm. awesome.

After we cleaned out the tank we were on our way to mom and dads for a birthday dinner for my Sister in law, Bea and for myself. After dinner it was time to sing!

  • Alright, let's get the, "ear splitting" singing out of the way!

  • Then onto dessert...

Great Day but with a unsettling note, Dad is going in the hospital to have a valve replaced and and artery repaired, Wednesday, so were all a bit on edge but it was good to have everyone together beforehand.

Strombolis is one of my favorites, there really is no way to mess it up.

Thank you. I can eat those buggers right out of the can like candy, it's one of those foods that are loved or hated, no in-between.

Thanks Al. And this cake was a tossup with the "Guiness" cake loosing out, but both are fantastic and a lot of work but the mileage on these cakes is pretty good!

Everything looks so awesome!  I am currently on a low carb diet and I would kill a man for a piece of that stromboli!  Points for a great weekend!!
My doctor calls me a "Carb Whore" so I feel your pain!

Nothing like a fresh hand carved "Sandywich"w/shrimp combo platter at Sandy's. It's the pastrami for me. Been stuffing myself there and the original location for over 30 years. Dave and his wife who own it now are great people with the customer fully in mind. I still get a kick out of all the ovens stuffed with meat 24/7. Next time in try the Poutine Fries if you haven't already. Me and the wife usually hit there couple times a month while Dave stops in where my wife manages for a bite and a beer. Great guy.
