So having seen a video on west Tennessee dry ribs I decided to make some up.used loin back ribs took the membrane off then just applied some kosher salt to the ribs, then put them on the smoker naked at 275 for 3 1/2 hours. used hickory wood spritzing them every 30 min with some apple cider vinegar, then at the end took them off rested them for 20 min and applied the dry seasoning. a different style of ribs as opposed to wet and sticky but very flavourful and tasty

3 1/2 hrs seems 30 mins too short. How was the tenderness? They look great though! I have been advised by competition folks

2 hrs 275
45 wrapped
20 mins unwrapped with optional sauce every 10 mins

the tenderness was great  came off the bone nice and clean. they were smaller loin backs  so  if they were bigger like 3 pounders  you could prob do them for 4 hours.  from what ive read on west Tennessee dry ribs  you dont foil them, they are supposed to be cooked hot and fast with no rub on them. just naked on the smoker  just spritzed with  juice or cider vinegar  then the seasoning is applied at the end. i just went  by what Carey Bringle the pitmaster  of the peg leg porker said he does  his at temp and time wise, and they came out pretty good 
 
I have been wanting to try dry ribs and these look great. Points for the inspiration!

i just googled Memphis  dry ribs  and lifted  a recipe  off one of the sites 
Rendezvous Seasoning Rub
1/2 cup salt

1/4 cup sugar 

1/4 cup ground black pepper
1 Tablespoon granulated garlic powder
1 Tablespoon dried oregano
1 Tablespoon ground celery seed
1 Tablespoon paprika
1 Tablespoon chili powder
