The Mrs got me a stuffer for fathers day so I figured the 4th would be a perfect time to have my 1st go at sausage making.  I figured Id start out easy and bought a Lem sweet Italian sausage mix from bass pro along with some 32mm hog casings. 

Started with a 7lb bone in butt.  After trimming and grinding I ended up with just under 5 lbs of pork.  It went pretty good but will definitely get easier with more practice.  I need to somehow mount the stuffer to something it kept sliding around.  I'm think just clamping it to a board.  

Well heres some pics...i did a test fry and it tasted like sausage...More pics after its cooked later today.

Thanks everyone..No money shots unfortunately.  They did turn out very good but I either over cooked them or didn't add enough fat so they were on the drier side.  Definitely something I will try again.  Can't wait to make some snack sticks and summer sausage.  Thank you Dan for the suction cups idea...they are on sale for $7.99.

Second, the sausage looks really great for a first time. I wish my first stuff had turned out as well.

nice job....I see somebody else likes a FAT sausage....LOL......stick one of those in a stadium bun with some grilled green peppers & onions....pure Heaven

Thanks guys!! It was a great learning experience.  Going to try breakfast sausage next and I have a LEM summer sausage kit to make as well.
