Ok, this started out as an application to the bacon club. Two weeks ago I put a couple of pieces of belly in pop's brine with a little Maple extract. Last night I took them out to rest in the fridge overnight.
I hung them in the MB with the mailbox setup & tube full of pellets.
I thought what the heck & fired up the offset & threw in some ribs.
The Mrs warned me that if they weren't FOTB this time she would cook them inside from now on. WELL! The gloves are off! I've kept the stick burner at around 270 (actually that seems where it's comfortable).
I just foiled them after 3 hrs and tossed in a few ears of my take on prankster's street corn.
Meanwhile, I just re-filled the tube with pellets and the bacon smokes on.

Not too worried about the FOB ribs, Richie. After unfoiling & saucing it took 2 hands to put it back in the smoker [emoji]128521[/emoji] Anticipating defeat, she made a batch of her excellent potato salaad..
Really excited about the bacon. I just put another 3hrs of pellets in. It's chilly here, so the chamber is staying below 75 degrees. Perfect for cold smoking.
 
Those ribs look tasty,I'm too afraid to make my own bacon if it gets better I maybe deader!:biggrin:

It's going to be tough, seeing and smelling it every time we open the fridge LOL!
I was planning to throw 3 or 4 more hours smoke on it this morning. Do you think the 7 hrs yesterday is enough?

If the sides of it look like the end,should be good after 3 or 4 more hours
