Transport of Wings??

Hey everyone,, hope you hall had a good weekend and your smokers were full

Question

I have a party to go to next saturday,, they want me to smoke and bring 5lbs or so of wings,,,no problem,,, I am going to smoke them Sat. morning and party is not till 4,,,,  Marinate them over night in my buttermilk brine....

Party is 1 1/2hrs away from where I live,,, should I just wrap in foil when done and put in cooler with blanket like a pork butt or what??

I have been thinking about this and if you have access to a grill or oven at the party.

How about smoking them to around 150 IT wrapping them & putting them in a cooler & finishing them on the grill or oven when you get there.

Good idea Al but I think if you smoke and wrap put in cooler they should be fine however if they are crisp they may lose that when wrapped and put in cooler. Just my$.02

What about adding a little HOT liquid into foil (or bowl foiled) to make it like a steamer????  Or just the wings by them selves???

I was thinking about taking a roaster oven with me and throw them all in there and just have a free for all LOL

Try putting super hot water in the cooler while they are smoking,that should have the cooler ready for the ride.

No matter how you transport, you won't have crisp wings when you arrive. Smoking to 150-155 is fine and finishing on-site will get them to 165 and crisp. Transporting Hot in a cooler will cause the meat do be falling off the bone by the time you arrive and a mess when trying to grill. Smoke to above then Refer, spread in a single layer on a sheet pan, and transport Cold. Finishing from Cold will give a better finished product and safer too...JJ

Ya party doesnt start till 4 I should just load the smoker into the pickup and go early,,,,, that would be the easiest LOL

Taking the smoker lets you do other quick stuff like ABT's, Sausage Shots and Moinks. Little more of a PITA for you but you will make a great impression...JJ

Yep I was thinking the same ting,,,,, Now,,, how many lbs of wings can you get into a MES 30 (4rack) Need to start thinking of more app to make

I am a little late to this party but is there anyway you can fry them at the party. I have never made them myself but have tried wings on many occasions that have been smoked then flash fried for crispiness. It's great! I have one of those little deep fryer appliances and I am dying to try this.

Sounds like you've got some great answers but I'll throw in my experience.

Did something similar for a superbowl party this year.  My drive wasn't nearly as long as yours but once I made it to the house they did sit for a hour or so its about the same.  I smoked mine and wrapped in heavy duty foil. I then wrapped in a towel and into a cooler.  Stayed warm for close to 2 hours.  I wish where I was going had a grill but they didn't so I ended up with some rubbery skin.  People still raved about them but I knew they could be better.  I hate being my own worst critic.

So what time are you going to be at my house on Saturday? I have plenty of smokers, so just bring the wings and we'll figure out the logistics!

This is where the Mini-WSM really shines. Easy to load and easy to pack! However hard to get a large load into it with out modifications. I can get 5# of wings in the mini on two racks though. If they aren't whole wings then I can get more in there.
