How do you deal with the long sausage link when stuffing?

I buy my casings from sausage maker in a hank. The casings are very long, one will hold over 15lbs of sausage. What do you guys do with this very long sausage link while stuffing? It gets to be a pita for me sometimes so help me out here!

You mean fittimg it on the tube?

I have a huge sheet pan i coil the link on when stuffing then link after.

I steal my Wifes Condiment Lazy Susan. The base on her's is steel and on bearings. Lay the sausage off center on the tray and the force of the filling sausage coils itself...JJ

I like that idea!
I'll have a little water on the countertop to make the rope slide around and after a couple feet are stuffed I start a coil, then continue stuffing, stop and coil more and start stuffing again. I sure miss my old place where I had a 7 foot top to work on.

This might seem like a crazy idea but I generally cut mine into manageable lengths. About 4 feet works well.

I always work on a tray, either a full or a 1/2 tray. Like the others, just a little splatter of water makes the stuffed casing move on the tray like a slip 'n slide!

Another thing I do. I use a 5 lb stuffer. I can refill it and do 10, 15, 20 lbs with loaded casings. BUT I find that a 5 lb link chain is just so much easier to deal with. storing in the reefer, smoking it fits my dowels just right, easier to move around, I've tryed longer ones but 5 lbs suits me just fine.

The only benifit I see in a larger stuffer is possibly a better mechanical advantage maybe.

I don't have a lazy susan.  My old, single layer steel pizza pans over the years have a slight dish towards the center from being cut on so many times.  They spin like a dream on my counter, acting like a lazy susan.  This also makes a coil just the right size to put on the rack in my electric ECB.  Just flip it over like a cake.
