Venison in a bag, aka Summer Sausage

Friend had "20" pounds of venison to turn into something. He was close, ground weighed, 15 pounds.

Used this recipe as a base (5pounds of meat)Adjusted for weight.


50g kosher salt
5.5g Cure #1
20g dextrose (corn sugar)
6gWhite pepper ground
1 Tbs whole pepper corns
4g coriander ground
1 Tbs whole mustard seeds
2g allspice
6g garlic ground with meat
6g onion powder
1/2 cup NFDM

That should turn out to be a nice summation of flavors! Interested to hear how the combo of whole peppercorns plus whole mustard seed are. I have used peppercorns in Cotto, and whole mustard seeds in Goteborg, but not both in the same recipe. It's intriguing, and should make for a nice texture on top of the flavor.

Looks like a typo on the salt quantity, though. 0g of Kosher ain't much.

I do believe that there is now an android app. I really like mine. Buy the extra probes. I have two meat probes and two ambient probes. At times I wish I had a third meat probe.

Sausage is still smoking! Close though. Very close. Won't be anymore photos tonight though.

Yes. Firsthand knowledge. Nice to let something do it's thing, and stay in the recliner rather than run to check. Range on it is pretty decent, too. Smoking down in the garage, and I'm upstairs, through stone walls. 

I agree with Dirtsailor - an extra probe or two would be nice. I'm only running two, but will probably only use them as meat probes from now on, since I know my ambient temp is dead-nutz to what I have the PID set to.

I love my Thermapen and my 733 but that iGrill2 is givin me some thermo envy!
