MES Temp probe question

How do you get a remote temp probe into the smoker? Just in the door and shut it (not worrying about the seal) or run it down thru the top vent? My MES 40 has a built-in temp probe but I have a very nice probe I have been using while grilliing for a few years and was going to see how close the built-in probe accuracy is. Thx in advance

Hi, all of your answers are right by me. I use both access points with no harm to the door seal or wire. One caveat is I try not to run it at the hinge point  Jted
 
Both but my MES is on a Utility Cart now and can no longer reach the top vent, so door it is...JJ
 
Hi Smoke house chefs, I have a MES 40 SH with built in meat  temperature probe. This must be sterilized before each use right? My question is How do you sterilize this built in temp probe before each use? I have not been using my Temp probe.

I would do it just like I do my Maverick Meat Probe. I wash it pretty good with Mrs Bear's scrub sponge (no water on the joint between the cable & probes). Then just before inserting the meat probe into the meat, I rub it a few times with an alcohol wipe.

Note: I don't use the MES built-in probe any more because there's no easy way to check it for accuracy.

I only trust My Maverick ET-732 units.
