I just realized something it's cool if you laugh. I had the thermal couple in the middle of the grate right over the burning tube. Duh. I was really impressed with the insulation for a minute there . I'm laughing at myself
It was at 75° but by the time I posted it hit 86°.I've since moved it to the side,same height and down to 70° and holding steady. Smoking some cheap cheese. My first time.

Once I move my smoker outside, I need to look at building some insulation. You just have it wrapped or is it stuck to the smoker?
