Hey SMF family and friends,

Thought I better check in just to let you all know I am still kicking, smoking and cooking! I've been busy with one catering gig after the other.  Boy I tell ya, working really gets in the way of my "smoking playtime".   I have three more catered gigs to do by the end of the year. Today, I am smoking 2 briskets for a party I am catering this weekend. It's cold here in Vegas today plus it has been sprinkling off and on all dang day.  So it's has been slow going with my smoking ugh!  My briskets are almost at the IT where I am going to pull those bad boys off the smoker, slather them with some awesome foiling sauce, wrap with foil and finish cooking them in the oven.  It's friggin cold outside so I am done playing outside lol.  Time for happy hour........that will warm me up after spending the day in the cold........

Anyway, I wanted to stop by and say, I hope you all have a wonderful holiday season and a Happy New Year........

Funny thing about weather, ain't it? It was a balmy 73 degrees here in NE Oklahoma today, and youre freezing in the Vegas desert!

I know Bro J.....it's a shame work gets in the way lol.. I got a brisket question - I smoked 3 briskets today. they are done and resting nicely in my cooler.  This is the first time I have done the "cooler resting" thing.  Not sure how long I need to leave it in the cooler.  I've been reading different comments and it seems everyone does it a little different.  So tell me Bro J - how do you do it?  how long does my briskets need to stay in the cooler before I can slice and refrigerate them?  I will be bagging the slices and vacuum sealing the bags.  It's been a while since I smoked brisket so I need some help please.....................
 
Sounds like you'll be reheating those brisket slices. I always rest mine a minimum of 1 hour.

If serving hot the same day up to 3-5 hours in the cooler wrapped. Slice and serve.

ok thanks DS.  Yes I will be reheating slices on Sunday. will vacuum seal slices along with juices - it should reheat ok right??​

Good to hear from you too Red.  I can't believe how busy I have been lately.  Holidays are not the same since my Jerry went home to be with GOD. Cooking and sharing my food with others is what brings me joy these days my friend.  I hope you and yours have a blessed holiday season.  Enjoy that balmy 73 degrees up there.........
