Lots of pics. this is normally made with Flank Steak. We had a package of London Broil in the freezer so it was used.

Marinated Beef
1/2 cup soy sauce
2 to 3 tablespoons lemon juice, or to taste
1 tablespoon brown sugar

Flank Steak sliced 3/8" thick marinated over night

These were pounded out

Tomato Sauce
3 tablespoons olive oil
2 medium onions, diced
8 cloves garlic, diced
6 whole tomatoes, diced
3 to 5 tablespoons fish sauce, or to taste
Freshly ground pepper
2 cups tomato sauce, if needed
2 bay leaves

Filling
1 whole chorizo de bilbao
4 tablespoons grated (Edam or Gouda cheese)
2 tablespoons sweet pickle relish
2 tablespoons raisins
1 1/2 cups ground pork
6 whole hard-boiled eggs, peeled
4 carrots
1/2 cup Olives

1 cup cooled tomato sauce mixed with the ground pork, relish

raisins and cheese

You have to sew the ends together

Cook til the meat is tender

We made enough to freeze some

Serve with rice or noodles I had some taters in the pot.

Thanks for looking

Richie

I forgot to put down 1 little detail, they are easier to slice partly frozen or real cold. They can be reheated with the sauce
