Mountain man Breakfast, dinner!

Rainy wet day. I had planned to make this over the coals, but since we weren't camping I decided to stay dry.

You can add just about anything you want. Typically I cook everything in the DO, but used the pan to speed up things. Cooked all meat and veggies in the CI pan. Warmed the DO up in the oven. Got the tater tots going then added the rest. Made a simple gravy just because it's not heart attack in a pot without it!

This is a half batch so the following was used:

6 eggs
1 package bacon
1 log of jimmy dean sausage
1 bell pepper
1 small onion
1 small bag of tater tots
Grated cheese 1 store boughtbag

Cooke bacon, reserve grease. Brown sausage. Sautéed veggies in bacon grease. Add bacon grease into DO. Add frozen tater tots. Stir occasionally. Cook tots until they are warm. Add everything back into pot stir good. Add half cheese and mix. Make shallow well in middle pour beaten eggs into well. Top with cheese and bake for 15-20 minutes until eggs set.

Dang it....my breakfast this morning was no where near as good as that looks! I am still hungry and that didn't help!! Nice meal!

Thank you! we make this at home whenever we need to feed a big group, or when I want lots of leftovers. It reheats easily and transports well.
 
Looks great do the tots crisp up in the oven?

If you are patient enough they will crisp up. These were just browning up when I added the other stuff. I probably should have let them go a bit more, but everyone was hungry!

When we make this camping the bottoms always turn out super brown with the DO setup for 350°

I got to thinking and this would be a great dish to use buffalo chicken thighs instead of the bacon and sausage. Inject the thighs with Franks and Creole butter beer mixture. Smoke thighs then shred and add to the other stuff. Oh yeah gonna have to try that!
