Danny you need to be clearer about what you are using it for. Cure #1 is sodium nitrite

That's good advice right there.

For the snack sticks, you'll want cure #1, just make sure you use the correct amount of cure. Do it in weight, not all measuring spoons are the same, and when you're only needing a couple of grams of cure, it's best to weigh it.

For each kilogram of meat (1000 grams) or (2.2 pounds), you need 2.5 grams of cure. That's not much so it's easy to over/under measure with a spoon.

To be clear, Cure#1 is not Sodium Nitrite - it contains Sodium Nitrite at 6.25% in Sodium Chloride.
 
 
i purchased sodium nitrate from amazon, received sodium nitrite, can i still use this product? i read that the nitrate turn into nitrite. i sent it back 1 time, got the new package, and received the same. will this do the same?

BE VERY WARY ABOUT BUYING CURES FROM AMAZON OR EBAY. I have bought them too and when I have had them lab tested they have not been what they claimed. You really should only but them from a reputable supplier and then you should ask for a copy of the lab test certificate. 

You are lucky that you could actually tell that you had not received what you requested. Often you cannot tell.
