Hi all,

I'm from Howell Michigan and I've been there for 15 years. I have 5 acres full of deer, turkey and a few other critters so smoking venison for jerky is nothing new. However, Within the last few years I have become obsessed with smoking meat and the whole scientific process that goes into it.

When I made Jerky we were using an electrical vertical from bass pro shop. That was about 8 years back and I borrowed the smoker. Well a few years ago I purchased a barrel drum grill that I thought I could smoke with and that didn't work out that well (see avatar). Then the beginning of this year I bought a char-grill dual with a smoke box. I quickly realized when I started smoking that I couldn't control the heat or the smoke. So I did some research and made the mods to it and now I'm satisfied.

That's not the end... Last weekend I went to the scrap yard and bought a 120 gallon propane tank that is sitting in front of my garage full of water and dove soap. Guess what! Today I bought a welder. Yep that's right I'm going to build a reverse flow off-set smoker in my garage so I can do this stuff right.

Welcome Nelson from Shelby township. Sounds like you are on your way so, be sure to take lots of pics of your build. Also there are a lot of guys on this forum who can help you with your build if you hit a snag.

Be sure to check out the MI members group (link in my signiture block below). We do annual gatherings every year in Fowlerville which is in your neck of the woods, so keep an eye out. Take care and Holler with any questions.
 
Great... That's what I'm looking for. I'll check out the link  As far as the smoker goes, I'm taking lots of pictures. I did my cut out Thursday and a burn last night to get the smell out of it. I finally got it into the garage and hoisted on a table. Should I start a new thread just for my project or how should I go about posting. This is the first forum I've ever been on and it's a little confusing. .

Hi, Are you keeping your exhaust at grate level to draw the smoke down? So basically the smoke comes from the fire box into the smoking chamber an has to move down to go out the exhaust? Does this keep an even flow across the meat?
I'm building one from a propane tank and had thought about putting the exhaust pipe on the side instead of on top. any thoughts?
