Smoking pork butts for a group of about 60 next weekend, just wanting some advice on how many butts I will need. Lets just say for simplicity they will all be 8 pounders. Thanks

The commercial people figure 1/4 lb. of finished product per person if that is the only meat you are having. However that plan does not work for my group it is more like 1/2 lb. per person. So taking 5 or 6 butts to do the job. if your group is heavy eaters you would like get 12 - 14 people per but

Most of the folks I fed catering in PA was minimum 6 oz for sandwiches and 1/2 pound for Plated Q, plus 3 oz of each Side dish. I also went with 1 1/2 Buns per person. Guys had 2 sandwiches and Ladies and Kids 1 but that depended on the group and event. A 1/4 pound would be ok, if You are making the sandwiches, portion control or with another meat like the Sausages sliced in 1" pieces, 3 oz per. Below is the Math I use...JJ

6oz portions X 60 guests = 360oz Pulled Pork / 16 oz per Lb = 22.5 lbs PP / .5 (50% yield) = 45Lbs Raw Butts needed / 8lb average = 5-6 Butts as HalfSmoked suggested..

HAHA.  I was thinking the exact same thing.  I destroy 1lbs easily, and my wife will do 0.4 lbs.  I say 0.7lbs / person post smoke (after weight loss).  Assuming 40% water loss (cent recall, is this correct?), you should start off with around 60lbs of pork, so say 8 butts?

You were not wrong, there are Caterer's that go lite, 1/4lb, but that usually depends on the event. Lady's or Business Luncheon, Kids Party, Multiple Proteins, can get away with 4oz. In general 6oz portions covers the most possibilities. Mixed crowd, men eat more, ladies less. Serving Alcohol, folks will eat heavier, at least those not there to get hammered. Weddings and Family Events , have a guest mix, unexpected guests show up and seniors like to take a plate home...JJ
