HEB in Texas has been running port butts, cryo wrapped, bone in, for 97¢ a pound for the last week or so. I picked up a couple in the middle of last week. I didn't pay much attention to anything but size when I got them; but when I opened them up for the wash up and rub, I found that one of them still had the pork skin intact. I've never bought one with the skin still on the butt before. Knowing that pigskin is tough enough to kick around all day in a pasture (Andy Griffith's What It Was Was Football), I took my boning knife and cut the skin off leaving as much of the fat as I could.
