Usually beef ribs don't have any meat and are nothing but bones. Actually found three beef center racks of ribs with meat on them. I will smoke with cherry wood with a 2-2-1 method and then take my boy to the batting cages.

good timing, I was just about to start looking that up, got me some beef ribs a few weeks ago.  wasn't sure for the how long they take.
 
Good looking food!! Nice video too. Just a suggestion, but if you hold your phone sideways (to match the aspect ratio of YouTube, computer monitors and TVs), it will make for a much more pleasant viewing experience.

Yep, I'm always on the hunt for those meaty one's.  Best time is after the holidays when they are long on standing ribs.  Nice looking meal you got going there!!!!  Reinhard

That's exactly what I do, except at Safeway (owned by the same company now). All you have to do is ask the Butcher for the no-trimmed beef ribs. What you get are two racks cryo-packed. Usually a few pennied per pound less than what is in the case.
