Hey all, made some Brats & Texas Hot Links yesterday ! I have to give a big shout out to BDSkelly for the Brat recipe & Chef Willie for the Texas Hot Link recipe ! So with the Thank You's done, here we go ! I did miss some pics as I had to go this alone off & on... Apparently I'am not a multi-tasker... Who knew.... :dunno LOL !

********************* One note I need to make is on Chef Willie Texas Hot Link recipe, is I left out the cure due to just gonna cook these up fresh & not smoking them.********************


My helpers after the Brat seasoning was mixed up !


Cubed up 10 lbs of Boston Butt & seasoned the Brats !


Mixed up the slurry for the Hot Links ! Cubed up 5 lbs Boston Butt for the Texas Hot Links !


Both Brats & Hot Links ground thru medium plate !


My grinder help !


Couple hog casing ready for stuffer !


Stuffer loaded a few times & the stuffing be done !

They went in the fridge til today, I will vac pack these later & off to the freezer they will go !

The recipe I used was one that I found. I was looking for a very traditional recipe. My next batch I am going to tweak it a bit. I'm going to add some heat and fresh garlic. I am also going to take the time and cube 3/4 of the meat 1/4" and only grind 1/4 of it. Mix the two together.

Last week I de-boned 9# Thighs that grinder is a beast,less then 3 minutes to grind it. Took me longer to clean.I like it.Thanks for the heads up on it.
