photo's of new sausage stuffer

it came by UPS this morning and we put it right to work stuffing 25 lbs of pork sausage  , its the 11 lb Vivo stuffer and the damn thing is built like a frigging tank

 there wasn't as much left in the bottom as I had expected , after we finished stuffing and cleaned the meat out of the elbow and tube , I made (4) normal sized

patties and cooked them  . so surprisingly very little waste the link that you see my wife holding up is what is left when the piston bottoms out , ( we know this because the last 5 lbs we added some Habenero pepper and this is where it started showing up as it came out ) then after taking it apart to clean it I got the 4 patties from the tube and elbow

 
 
Looks great did a nice job filling the casings.

  I have the sausage covered in the fridge letting the spice do its thing over night and will smoke them tomorrow , but man is it a lot easier using this

than it was doing our 1st 25 lbs using the stuffing attachment on that frigging meat grinder ....this thing made the job of stuffing  much much easier plus a hell of a lot faster only took about 20 minutes total time from start to finish

Cal being you are going to smoke,what kind of sausage is it,maybe a recipe? I am getting a new grinder soon.
 
I order the spice from a commercial  spice place in Mississippi , I have no idea what is in it but with that said, I can smell a lot of sage and black pepper , it makes the kind of sausage that I could only find in the deep south when i lived there many years ago , so when I could not find pure pork sausage here in Colorado i started looking into making it myself , and this is the best tasting sausage i have ever found . hands down ,   the funny thing about it is that when i tried to fry patties from it before it was smoked , it did not even come close to tasting right and we thought we had royally screwed up , but after slow smoking it , i took a bite and the flavor was perfect,  send me a private message and i will  tell you where to order the spice  

oh and the grinder I'm using came from harbor freight , this makes 50 lbs  of pork that w have ground using it and we love it ....can't beat the price of the grinder $ 66.00 including shipping

Cal, You can't beat your own sausage and its' a lot of fun to make, the clean up is no fun though !

i was a bit surprised at just how well built this thing is , you could run over it with a semi and not damage it , as anyone that took part in my thread . " a couple of questions about stuffers "  knows I did  a lot of research and in the end just told my wife to pick one and she picked this one because she liked the color ...but truth be told I could not be happier with her choice

And another one is hooked! Not only does it reduce the stuffing time but....... I found I was all cleaned up so fast, I was actually surprized!

Now next comes the grinder! Then the vac-sealer.... then a slicer.... LOL.... It ain't free but its a delicious addiction.

these things sure aren't cheap ( in this case about $ 150.00  ) but if your doing more than 5 lbs of sausage they are worth every penny . plus I don't think you can ever wear one out if you take care of it so it so you only have to buy it once and your set for life
 
Nice score!! I remember the times of trying to stuff thru a grinder what a pain!! Once I got my 5lb stuffer I have never looked back would like a larger one for those big stuffs 55lbs thru a 5lb stuffer gets a little old.

the sausage has been smoking for a couple  of hours now , will post photos of the finished sausage as soon as they are ready .....thanks for all the comments
