I traded two Utah elk roasts for a Brinkman Smokin-Grill. Where can I get info for the best ways to build/ maintain heat, and the proper methods for getting it right?

We're glad to have you here. The search bar at the top is your most valuable resource here. This forum has been around for over ten years, so there is a good chance that any questions you may have, have already been answered (they may have 10 different answers, but you'll get an instant response non the less).

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing

Welcome from SC, Kwalker. I'm sure you will enjoy this site. I don't know anything about your smoker, but if you send me one of those roasts, i will send you two sticks of wood and a box of matches.
