Dug this 9 pounder out of the freezer this morning before work. Starting smoke at midnight for pulled pork lunch / early dinner Saturday..

My first actual Boston butt smoke, my last 4lb boneless butt turned out great.

Smoke plan is 225-250F on my 18" WSM with hickory until done.

Woke up once during the night at 3:30am when my MAV733 250F HI alarm went off. Closed vent half way, shut off alarm and went back to bed.

Woke up at 6:45am and WSM temp was at 190F, probed butt at 151F so I opened all vents and knocked some ash off the coals to raise temp to 250 and will maintain that the rest of the smoke.

Current IT 156F.

8am peek while coffee brews...

Seem to have hit another stall at 174F. Can't seem to hold steady temp above 240F due to yet another windy day here in Alberta. Oh well, dinner is not for a while yet

Added the last of my Kingsford Competition. 12 hours and I've gone through an 11lb bag of charcoal. I need to invest in a welding blanket...

The weather held up a bit for a short period, so I made up a few friends for the butt with some extra jalapenos from the crisper drawer.

ABT's (Atomic Bear Turds!) - Cream cheese mixed with Jeff's Rub and shredded monterey jack, Bear's beef sticks and wrapped in buckboard bacon (another Bearcarver recipe)

A quick peek while I add the turds - 183F IT on hour 13. The rain has commenced again since..

Have you ever taken the fat cap off completely? More bark and it still stays moist.Thumbs Up
 
 
Just ordered a 4'x 6' welding blanket. This on/off rain is sucking the heat right out of my poor WSM...
My son gave me an old welding blanket a few years ago. It had holes in it, and I left it in the garage a few months. Dang mice chewed it into nothing & built nests all over the place with the stuffing!!

So don't just leave it lay around for any length of time.

Finished at 202F at 15.5 hours, the bone was ready to fall out. wrapped in foil with a bit of apple juice and into the cooler until dinner time.

The ABT's turned out way better with Bear's products! Not as greasy with the BBB and the beef stick inside...

... Best ones I've ever made. This is the way to go.

Butt finished. Scraped it off the grate carefully, it wanted to do all kinds of falling apart. ABT's leaked a bit, the thicker BBB was a bit harder to wrap.

Foiling for the rest softened up my bark a bit which kind of saddened me. Any way around this?

Regardless, it still tasted delicious.

Served with ChefJJ's finishing sauce and topped with Jeff's Sauce (Saved a Sweet Baby Ray's bottle to store in)
