Smoking my first Chuck Roast in my fairly new MES 30 today.  3 pound roast, injected with beef broth, woosty sauce, and spog.  Then rub with mustard and SPOG.  Smoked at 235 until IT 160, then pulled, wrapped with onion, carrot, celery, and some of injection mix.  Waiting now for IT to reach 200 or so.

Looking real good, Bill !!

Like Noboundaries mentioned, I haven't smoked a Chucky since they were $1.99 LB, so you know how long that is!!

Finished chuckie ready to eat!  Came out too tough to pull, but had great taste, and not a bit dry.  I'm not surprised that it was not pullable, even though I left it in the MES to an IT of 202, this particular roast did not have very much marbling for a chuckie.  If the price of beef ever comes down, I'll do another one with a bit more fat to it.

Found this one in the bottom of my freezer...it was showing a bit of freezer burn around the edges, but turned out ok.  Not sure when I'll be doing one again, until the price of beef comes down.  Ad came out today the local Wally World has St. Louis ribs for $1.79 a pound...think I'll stick with pork and chicken, with an occasional fatty thrown in.

That's a pretty good price on those St Louis!!!

Around here, you don't find them even on sale for under $2.49.

Dang Chuckies used to be $1.99---Now usually $4.99 or even $5.49 !!!

Usually the best price we get is Pork Loins for under $2----Pretty often!!

Wow, I haven't seen $1.79/lb on SLCs in more than two years.  I paid $2.99 for the ones I have in the fridge to smoke today and considered them a steal!

Behind on this one   Looks Great  Nice Job
