For Easter tomorrow, my wife's and my parents will be converging on our home for a lunch time meal. Should be good fun. Her mom insisted that she fix the ham, fair enough. I decided to get up early and toss some loin back ribs on the mini over some apple chips. Good times are a coming my friends.


Beauts are salted and resting in the fridge over night.
 
Good idea! My wife wouldn't let me do brisket on thanksgiving my guess she didn't want here turkey upstaged:biggrin: as I'm sure your ribs will surely do! Those are meaty looking ribs! Next time make it a throwdown may the best ham win!
 
Way to go Iggy. Should be a great lunch. I bet she'll insist you do the ham next year (along with the ribs). I can't wait to see those babies done. Rock that mini!

Excellent idea haha I'll be sure to have a throw down very soon. I may even make it a surprise which would be even more uninvited haha. I'm telling you, Kroger had it going on with their rib selection when I snagged these 2 racks. These actually had about $7 knocked off the original price per rack as well ($18 per down to $11). I noticed they def appeared to have more meat than others in the area, low and behold, I was pleasantly surprised to see I was right!:biggrin:

Sure thing Murray! I'll be getting these dudes going around 6am so I'll have pics flowing as I get em.
 
Since I'm using the mini, I had to use a rack to hold all the ribs. Unsure how the finish product will turn out. They're touching in places and I hope it doesn't hurt my smoke ring or make the IT inconsistent. Anyone used these rib racks on the mini?

The two outside racks of ribs turned out excellent. I had to toss parts of the 2 inside racks in the oven to finish. The thickness of the ribs made them touch in places and kept the heat from doing it's job and thoroughly cooking the meat. Although they were finished in the oven, I received great compliments from the ribs and all were gone but 4. The apple wood worked excellent as well. I tried chips this time instead of chunks (thanks B) which allowed me to get good smoke without the bulk of the chunks in my basket. I may use the rib rack for uses down the road on thinner cuts or something but these loin back ribs didn't cook as well as I had hoped in it. All in all a successful Easter Sunday.
