Getting ready to smoke a 9lb pork shoulder tomorrow. It's going to be almost 30° out tomorrow, so I thought it would be a good day to do it.


Gave ti a mustard bath, then a good rub,and put it to bed for the night. Got everything ready to set up outside when I get up tomorrow morning. Should be a good day, I'm looking forward to it!

 
Get up early, get it smoking and patients

Well, I didn't get up as early as I wanted, but I got everything in just before 8am.

All set to go.


Fire pan full.


Put the meat on the bottom rack this time. 


Potatoes in a pan with boiling water. I've not done them like this before, but we don't like them just done on a rack. The skin always is ti dried out. I used to put potatoes in the water pan, but I switched to sand in there. It was a big improvement, now I just have to get potatoes down. Never tried whole onions before, and I ran out of room on the rack lol. So I just put the others on top of the taters. 


Yup, we got some snow!

4 hours in, added more fuel.


Potatoes are about 1/2 done (so excited! I think we almost like taters water-smoked better than the pork!) 

Onions are nice and tender. Taste pretty darn good, too. Should make a good sandwich topping. Bet some would be really good in scrambled eggs.

Those onions would be great in salsa or beans on burgers and steaks endless possibilities!!

Do the onions serve a purpose during the smoke?  I haven't seen that before

No, I just wanted to try smoked onions. I like to cook with them and thought they might taste good. They do!
