Than to cook myself a 13 pound brisket on Valentine's Day?

We're actually having people over tonight and I haven't done anything in my wood smoker in a while. I've also been craving brisket.

Here's some pictures from the start of the morning. I like to cook at 300 and this will be done in about 9 hours, I hope. I'll also be throwing on a rack of baby backs and some beans later on.

Just started to prep for potato salad and need to cook up some bacon. I decided to throw on this whole package on as is and see how it goes.

I open a can of Busch's and put it in an aluminum loaf tray.

I haven't tried my hand at making beans from scratch yet. My parents might come visit in April and if they do my dad will give me the 101 on bean making

I ended up taking the bacon off once it got a nice crust on it and then I just chopped it up and fried it up on the stove.

Ribs just went on and the brisket is looking good. I normally wrap the brisket at some point but I'm gonna see how long I can hold off and then just wrap it once I take it off for the rest.

I decided to wrap the brisket to keep it from charring up since I'm going smooth at about 315. I also just wrapped the ribs, but I used butcher paper instead of the usual foil.

Everything's coming along well. I'll put the beans on in a half hour.
