Excuse my ignorance but what is it? Have been looking thru Bearcarvers "how to" list and have decided that Buckboard Bacon is going to be the next thing I try....

BBB is cured & smoked Pork Butt.

It's done similar to Belly Bacon, but it actually has more flavor. IMO

Not Really.

Pork Loin would be Canadian Bacon.

Pork Belly would be Belly Bacon.

Pork Jowls would be Jowl Bacon.

Pork Ribs would be Bacon-On-A-Stick.

Pork Shoulder or Boston Butt would be Buckboard Bacon.

You got Fat Butts, Good looking butts, sagging butts, etc, etc.

However in Hogs, I would have to say IMO a Boston Butt is a fancy name for a Pork Butt, and they are the best part of the Shoulder.

I could be wrong on that, because I never really cared----I just get the "Boston Butt".

Here's another story I found for you:

The most simple way to look at it is that the whole shoulder is made up of two separate cuts, the butt and the picnic. The picnic is the portion closest to the knee where the butt is the portion closest to the spine of the animal, ie. furthest from the knee. Normally a Boston butt will be rectangular in shape. The picnic tends to look like a cone, with one side being larger and a smaller side having the look of an actual leg, bone and all. The Boston butt can be sold with the bone still in or boneless.

Next trip to town I will be swinging by Cash & Carry, they have boneless butts for 1.59 a pound right now. Buckboard Bacon....and Pulled Pork I suppose, have some questions about that but that is for another time...

So what else can I make with a butt? Beyond ribs and bacon neither one of us is much of a fan of pork. In my case it is because growing up when ever my mom cooked pork it was beyond dry. Hoping that my opinion changes with me smoking it. I Have had some pulled pork in the past that I liked.

Other than BBB or Butt Ham, you can make Pulled Pork.

Here is a Step by Step on that:

Pulled Boston Pork Butt         

However that Hawaiian stuff (above) has to be Awesome!!
