Just whipped up a simple brine with some maple syrup and some Emeril's chicken rub seasoning.
Now the only problem is I need to go get a bigger container to put it all in. I think we need a spare fridge ours is counter depth not much room to put stuff in. Plan is to smoke the wings on the WSM around 225 using maple wood for smoke.

Just a basic brine used brown sugar in place of white. Added maple syrup and the seasoning until it smelled good. We do need a spare fridge luckily I live only a few blocks from work and we have lots of fridge space. Planning to finish on the gasser with some maple syrup bbq, doctored Sweet Baby Rays most likely. Into the brine they go! $3.69 a # with my savings card hope there good.

The look good. I bought a bottle of maple syrup from Costco today in hopes of making something with it for the smoker. I'll have to try your recipe :)

Out of the brine for some drying time also added a touch of seasoning.
Also thinking if I get to the store I may get some honey mustard to put on some of the wings.

Update not smoking yet can't smoke on a empty stomach! Pierogies sautéed with bacon and green onion and four cheddar blend!

I will take a dozen.

Got a few lightweights in here I guess.

Thanks guys! They did turn out well glad I decided to go with a brine the flavor really got into the wings well made 1/2 gallon brine and only used 1/2 cup maple syrup stopped there because it smelled good.
