Ok Here is the stuff I have and I decided to make Black bean chipotle chili and meatballs. I know there is some pork involved here but it is mostly beef. I threw it all together minus the brats with some eggs, milk soaked bread crumbs, diced jalapeno's and sweet onion, salt, pepper, cumin, coriander, Worchester, and sriracha
Made the meatballs and some other stuff of course.
Firing up the Weber Performer as I post this. More later.
For the chilli I didn't have time to go from scratch so I used Goya Black bean soup, two cans, A big can of Nalleys Hot and A can of Rotel plus a can of sweet corn. Then I added home made smoked beef stock from my last chucky, 4 chipoltes chopped up and a can of PBR. All in the crockpot heating up. I will put as many meatballs as will fit when they are done smoked which will be two hours or so. ABT's for the cook.
