Wife's kabanosy

My bride told me that she needed a meat and cheese tray for her company Christmas party this coming week. I asked her what meats and cheeses she needed, and of course, it's some of the stuff I've been making. Both styles of summer sausage and smoked cheddar and Colby jack.

But she said she wanted to cut up some snack sticks into bite size pieces. I drew the line there, the snack sticks I've made so far are for my hard working boys and girls at work, not for engineers! So she said she'd make the sausage if I'd grind the meat for her.

She told me that kabanosy was her stick of choice. She has good taste!

Smoked and sliced.

Took them to 153 IT and then placed them on the granite countertop to slowly cool. Worked great.

Wow CB.... those look delicious.  I've made a ton of sausage in the last week but I haven't smoked any sausage yet.  I will definitely try these - what spices did you use?  Be Blessed and Happy Saturday.  Josie

For Kabanosy, we use this recipe. It's spot on and has worked so we we've never experimented with it.

Good stuff for sure.

I forgot to add, the casings were 22mm collagen. I don't care for the bite with them, but the bride has already stripped it from the sticks, so no biggie I guess.
 
Those sure look good, and don'tcha just love that smell when you open the reefer door the next morning after ya make 'em? LOL

I have not tryed cellose yet, all mine are sheep. But they are awfully proud of those sheep casing. I see another learning curve on the near horizon. any suggestions?

Looks great, brownie points, perfumes the air, how can ya lose?

I told her she couldn't have the ones I made for my folks at work. I'm giving them out this week since a lot of our employees are off the week of Christmas.

She volunteered to make her sticks of choice, as long as I ground the meat. She's nervous about the grinder.

I'd never deny her, she let's me make sausages and BBQ! :sausage:

You mentioned that you stripped the casings off. Couldn't you make these with a jerky shooter and smoke on racks instead of hanging?

Call me olde fashioned, but I like the stuffing part and love the shape and texture I get when I hang sausages. Most of the time these would be done in a sheep casing, but she didn't want to "freak" any of the girls, and a few guys, at work out with the sheep casings.

If they only knew how collagen was made! :biggrin:

CB sorry I am late on this didn't see it. Give the wife a point for me

Late? Nah, we just put the platter together tonight.... The sticks are cut up and on a tray, but the sausage and cheese platter needs. To be shown! I want it for my work gathering!

Regular SS and cheese and peppercorn SS with mustard seeds. Smoked Colby Jack and pepper jack cheese.

Reinhard, I'm amazed each time I smoke sausages at the color and texture change achieved. You start out with a cold, limp, funky colored tube of goop, and end up with something that resembles art to some of us! :yahoo:
