I left my sausage in the fridge overnight so it would be easier to work with today.  Here's my finished sausage project.

I cut the links with my pizza slicer


I cut the sausage for my "Maple Sausage Egg Bake Sliders" with a cookie cutter.  I needed a uniform size for the sliders.


Sausage for my sliders all wrapped and ready for the freezer


the roll of sausage is the meat leftover after I cutout the sliders.


Everything all wrapped up and ready for the freezer.

Here's the sausage stuffer I ordered today.  After looking at all the recommendations by my fellow sausage makers, I decided on this one - can't wait to get my new toy!




I like these clamps but don't think I will be using them.  I have a stainless steel work table in my kitchen.  I'm thinking about attaching the stuffer base on the end of my worktable.  Will post pics next week.

I hate the clamps too and have been trying to find a better way. I have been clamping them to a cutting board but it is only a mediocre success.

SmokinVegasBaby, those are some good looking sausages.  I have some pork I'm going to grind up tomorrow(I guess that would today) to make some breakfast sausage and summer sausage with.  That looks like the same stuffer I have, a 5 pound one.  It's good, you'll like it.

Disco, I had the same idea of mounting it to a cutting board.  If you find a better way let me know.

Hey thanks David.  I love my cutting tools lol.  I can't wait to get my Lem.  Do you have yours attached to a worktable? I was watching a video on YouTube and I saw those stuffers moving all over the table.  I know that would drive me crazy

Clamping your stuffer to a cutting board UGH..........I bet it still moves all over the dang table right?
 
Awesome sausage Josie! Love the uniform circles, very professional. I have a very similar stuffer to the one you are getting. It works great, but clamping is a pain for me too. I'm actually thinking of mounting it to the SS work table. That means I'll have small holes in the table, but I'm telling ya, there is nothing more frustrating than to be in the middle of sausage making and that thing moving all over the place. Takes away from the experience.

Yeah I will definitely mount the stuffer to my stainless work table.  I'm not worried about the holes in the table because my Margarita maker will cover them :o)

SmokinVegasBaby,  I've had mine for about a 8 months now.  It's worked great.  I wish I would have ordered the one with the stainless steel tubes, but I can get those later, haven't needed them yet.  I did get the small stainless tube for making snack sticks with.

stainless steel tubes?  Is there an issue with the plastic tubes?
 
Hi Josie,

Make sure when you get down to the end of the sausage stuffer meat (stuffer plunger is at the bottom) that you do not continue to crank the handle down or you can break the plastic gears. I have the same stuffer, and I read that some people did not stop cranking the handle and broke the plastic gears. Have fun with your new stuffer! and we want to see some videos of the new sausage you make!

As far as the stainless vs. plastic tubes go, for smaller "Slim Jim" type snack sticks most of the smaller tubes are stainless. The plastic tubes are fine and work good.

.....the sausage looks great..... I use a pair of these for clamps... They work great. You can even get the chepo's from harbor freight. Light duty for this application

thanks John - that's good info to know.  I sure don't want to break those plastic gears.  I read that also when I was researching sausage stuffers.  I will handle new toy like a brand new baby.  Of course I will be happy to make a video of my sausage making fun!  I need some help on smoking sausage John.  Any info you can offer would be greatly appreciated.  You know I will be bugging you!

Lookin good SJ, real nice ! That's looks like some tasty stuff there! That stuffer will be a great addition to the Q arsenal. Ya get a grinder as well ?
