Prime Rib for 5 (Double Birthday Dinner)

Mrs Bear’s Sister’s Birthday was on October 18, and Mrs Bear’s Birthday is October 21, so we needed to have a combined Birthday Dinner.

Well—We had 2 Prime Ribs left to use up before Christmas, so we invited Mrs Bear’s Sister, and her Brother & his wife. I knew I’d have to pull this one a little later than usual (Pink. but not bloody).

I told Mrs Bear to bring the biggest one up from my basement Meat Freezer, so she brought the one that was 6.65 pounds. LOL—The other one is 6.63 pounds.

I did the smoking similar to most of my Prime Ribs, and used a foil pan with a cooling rack this time.


Prepping (10-17-2014):

3:00 PM——————Rinse, Dry, and score through surface fat into red meat.
3:10 PM——————Coat with Worcestershire Sauce (Thick), and apply small amounts of Sea Salt, CBP, Garlic Powder & Onion Powder.
3:20 PM——————Put in pan on cooling rack, cover with plastic wrap & put in fridge for over night rest.


Smoking (10-18-2014)——Needs to be served at 5 PM:

10:45 AM—————Pre-heat MES 40 to 240*. Also fill two rows of AMNPS with Hickory pellets & light one end.
11:30 AM—————Put Prime Rib on second shelf, and place AMNPS on bars to left of the chip burner assembly. Reset heat to 230*.
2:30 PM—————-Sterilize ET-732 meat probe, and insert to center of roast. Current IT is 118*. Cut heat back to 200* to slow it down.
3:00 PM—————-Internal Temp is 125*.
3:30 PM—————-Internal Temp is 132*.
4:00 PM—————-Internal Temp is 137*. Put Twice Baked Taters on top shelf in pan.
4:30 PM—————-Internal Temp is 141*. Kill smoker heat. Open door to cool smoker below meat temp.
4:55 PM—————-Internal Temp is 142*. Pull Prime Rib & Taters.

Slice Prime Rib, add sides to table, take pictures & Eat.

Fantastic looking PR again. Just ate and looking at those pictures makes me hungry all over again.  Pictures are beautiful, we haven't started turning yet.

Looks great Bear, but how'd you get away without any of the misses' mini veggie quiche on your plate??? That'd be grounds for no desert in my house!
 
Grrrr..... software glitch!!!

Anyway, what I was going to say was, I didn't know that Ms.Bear was a twin. AND I just can't imagine a three day wait in labor between the two girls........ ZOMG!

I am giving you points for your Mother-in-Law.
