and don't be to hasty to toss the old ECB, pass it on to the next person that needs to learn. Or sell it to off-set your birthday present, lol.
Oh... don't worry that old ECB isn't retiring that easily. I spent a lot of time and drank a lot of beer making sure that thing cooked good. It still has a place in the stable!

It struck me when I read this, being new to smoking, when it does turn out good I'm surprised, even though I shouldn't be because I try to follow the advice from this forum. It's just funny when you said, "sometimes we even made it on purpose..." because I can sometimes make a mess of it, and then, next time, it's "good...on purpose..." Made me LMAO

As an added bonus, I happened upon this. I haven't driven my diesel in weeks. I popped the door open and saw 80# of KB I forgot I bought on sale...
I've made a lot of "misses" but here and there I hit a home run. It's just patience, which I have none of, and practice...

He's a big boy. Looking at the tracks, I figure he's about 350-375#.
I've thought about smoked bear. Has anyone tried it? Our gun club has a bear roast every year after the season wraps up. I think it tastes terrible. Way too gamey for me and I eat pretty much anything.

It's been about 3.5 hours since I dumped in about 3/4 of a chimney of KB. It hasn't varied more than 5° the entire time. I think I can get used to this! Although I will need a new excuse to walk outside for a beer...
This is with all vents wide open. Trying to get a baseline on how much charcoal to use. When I graphed my old ECB temps it looked like a sine wave. This thing is like a dead person's EKG! Flatline!!!!
