Hey all, 

My name is Sam, I reside in Sioux Falls, SD. I've been smoking for about a year (2013) skill level for smoking is good enough for my tastebuds but would be interested in learning more on curing meats for processing wild game, given I find some extra time on my hands.

My smoker is The Good-One Smoker, Open Range. Hope to upgrade to the Marshall at some point.
 
Good afternoon from the Piney Woods of East Texas,

My name is George and I am retired and residing in the lovely community of Palestine, TX.  My middle son has gotten me interested in smoking meats so I decided to jump in and see if I could learn at my old age.  I am blessed that my daughter and son-in-law live on 200 acres of woods with a large deer population so I look forward to smoking some venison before the year is out.

I am starting with the Deluxe Griller, which I got at the end of last month and have assembled, seasoned, and used once so far.  I have the side box on order as of today (hopefully it will arrive by next week).   I have spent the past couple of days reading about the various mods that have been posted, I am sure I will be seeking advice on which to try and in what order. I am open to all the advice you can provide as I am at the bottom of the learning curve right now.
