My First Smoked Tri Tip

Alright guys, so today i finally was able to smoke my first tri tip. I actually never even tried to smoke anything before. My first intention was to smoke some ribs, but i had to take an uncle of mine to the airport. Which tied up my whole morning and mid afternoon. So i decided that i would try a tri tip since it wouldnt take me as long. 

First i started with Jeff's recipe, i actually purchased his rub recipe and i really did like it! I think it was perfect! Just the smell alone was great. And it really did taste great on the meat. I also used mesquite to smoke my wood. I wanted to try both mesquite and apple but my girlfriend told me to just try one and then the other, to see which i liked best. 

IN the beginning, i got a little bit to charcoal happy! I lit way to much and my grill was just too hot. This was the first time using it so i really had no idea on how to manage the temperature. After the first 30 minutes with my tri tip on the grill, i managed to get the hang of it and keep the temperature stable around 260 degrees. I smoked it for 2 hours, and after wrapped it in foil and let it sit for 30 minutes. 

In the end i was really impressed. never did i think that i would be able to make a tri tip that good and juicy. The smoked taste was delicious! everything i was wanting! now with some more practice, i think i can do a better job handling the coals. The tri tip came out medium just like i like it! and it tasted great with out any bbq sauce! just the wood flavor and Jeffs rub recipe. side note: it was 106 today here in Bakersfield. it was hot as hell but i was too excited and really wanted to try out my new grill. 



 
Great looking Tip!

Only thing I can recommend is to get a good digital therm like a iGrill or Mav733 so you can monitor your meat temps.

Try the mixed wood, adds more flavors. Our favorite for beef is cherry and pecan 50/50 mix

It sure looks good, I have never seen a tri-tip in a market, but I sure wish I did after seeing yours. That sure is a pretty slice of beef, and I am not normally a beef type person. That sure is some pretty meat.

yea it definitely has to be a Cali meat ha ha --- it's at every single grocery store I go to.
 

If I can make a product recommendation, find yourself some "Jim Beam" lump charcoal.....it's lump coal and wood chips from the barrels they use to age their bourbon.

It smokes awesome, and has a great taste to it.  I found it up in Nor Cal when I cooked 3 tri tip roasts on an old school weber. Pretty sure it's everywhere though.

But overall, your roast looks great. and the great thing about cooking, is if you messed something up before, then you know what to fix in the future :)

 
Looks like you hit the temp I like on that one!

I would not recommend apple alone on beef.  I would mix it with stronger wood like mesquite, hickory, oak, pecan ..........

I think she had a great idea to start with the stronger wood first.  Then you can decide what, if any, of the lighter flavored woods you would like to mix with for beef.

Looking very good! Tri tip is one of my favorites. I can only join the recommendations of the guys here - get a good meat thermometer to have a more precise control, and do mix the mild wood (apple, peach, cherry) with a harder one - my favorite is pecan or almond (if you can get your hands on it).

Overall - great smoke!
