Friday Pork Butt's in East Texas

Last minute decision , I was going to smoke Pork Butts tomorrow, but today is going to be in the 70's and nice, with rain coming in this evening for tomorrow and Sunday. Sooooooo   here we go. No pictures yet, since it was last minute.

 I am doing 2  8#  shoulders as we speak. I am using my regular rub. Sat them out while I was getting smoker ready, rubbed them down with mustard then my rub, on at 6:00 AM I will start checking them about noon, sometimes I wrap sometimes I don't, If the color is good, temp coming up nicely I don't wrap. If they are getting too dark or the temp is too low I will wrap. If I do I will unwrap about that last hour or so to firm up the bark. I'll pull them when the internal temp is about 195º to 200º wrap them in foil and a couple old towels and let them rest for an hour or so. Internal temp will climb to 205º to 210º  The shoulder bone should slide right out and we will have pulled pork. AS usual I'll probable see what else I have to throw on, I know I have some sausage

I may not smoke as much as I usually do, all the grand,kids are out of town, they are the ones who usually gobble most everything up.

Been on for 2 1/2 hours spritzed with apple juice and apple cider vinegar , using lump charcoal (I got at Sam's) and hickory splits, rocking along at 225º to 230º right now.   This is a different brand of lump than they had before, Mesquite Lump real big pieces , we'll see ?

Wednesday afternoon it was 70*-------16 hours later it was 9*.

Never saw anything like that before!!

Seeing yard here & there now----Forgot what it looked like!!

The Lump I am using is "Best of the West Mesquite Lump Charcoal"  so far I'm not impressed, O-K  seems like it burns up to fast, Looked it up on (Necked Whiz) Charcoal reviews they said it had been several years since they did a review on that one but had given it a  "Below Average" rating.  just wanted to let everyone know. Here in the Tyler area we are pretty limited to different brands of lump.

Other than that, everything going good, spritzed the butts, color good, temp at 225º, steady stream of "Thin Blue Smoke" coming out of the stack

Should have added this, this morning, since it was last minute decision, I didn't realize I was almost out of rub, so I had to make that up while my butt's were resting, I noticed about an hour ago I was out of sauce so now the whole house smells like BBQ sauce, I use some vinegar along with a bunch of other stuff, so you know what that smells like while you are cooking it. Door is open!  Wife keeps telling me I need to make it outside, Maybe next time.
