First Smoke in the AM - Chuck Roast - QVIEW

Well tomorrow is the day that I give smoking my first try. 

Started off with this 3 lb chuck roast.


Gave it a coating in rub and placed it in the fridge til the morning.


My plan is to bring the smoker up to 250, Hoping to grab some hickory or mesquite in the morning, as I only have cherry now.  If not I will just use the cherry, but I'm not sure it will give it enough smoke flavor.  I'm going to put it in the smoker until the IT hits 165, then pull it out and foil wrap it with some beef broth and put it back in until the IT hits 190 for slicing.   Then
I plan on towel wrapping it in a cooler for an hour.  Anyone have any idea on how long I can expect it to be in the smoker?

It will take 5-6 hours at 250°F...JJ
 
I don't know how long it will take but I know I would like to see the finished product. May I have more Qview, sir?

No doubt about that!  Hoping he finds me plenty of birdies to put in the smoker this season. 

Had to make one minor adjustment to keep the temp in the 250 area since the smoker is now in direct sunlight.  Smells great though!

I hope you are referring to ducks. I love smoked duck.

Nope, pheasant, quail, etc.  Upland birds, hes an upland pointing dog, hates the water.  I would like to get more into duck hunting as well, but time and money seem to get in the way.

I haven't had quail. Pheasant is tasty. Around here we get grouse. Grouse breast is just delicious if you ever get the chance.

Yes, I've been wanting to take a trip up to Maine for a grouse hunt.
