Hello all! I'm Patrick from NC. I make BBQ. Everything BBQ. I use my custom build smoker that has no name other than my ManGrill. I also just got a La Caja China pig roaster. Pretty bad ass. I compete regionally and have won a few. Sorry Texas and Kansas, but you've got nothing on NC. :grilling_smilie:

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

Short Sugars in Reidsville. The most outstanding sauce in the country! Must be cause they been doing BBQ longer than most of the older folks around here have even been around.

I gotta admit I enjoyed the pig pickins in N Carolina.  But where I'm from beef is king!  Welcome aboard from a transplanted Texan.  ...but I never had better ribs than in Memphis!

We love to see pictures of what you are cooking (or what we call q-views here at SMF).  To "upload the q-views" just follow the directions here and it will be easier. If you are using a cell phone, an IPad or a kindle, go to the main SMF page and click the Mobile button. Will make the uploads a bit faster too.

If you didn't read the "Terms of Service" notes.....please do.  There are a few things that everyone should know about those pesky little rules before plunging into the forums and some guidelines of how to interact within the forums. Off site links are not allowed here at SMF per Jeff. Not that you have done anything wrong....just a little bit of FYI for new members!

Oh, you poor deluded soul. The best barbecue comes from the coast of British Columbia, Canada. Fresh caught salmon slow cooked over alder embers and brushed with its own juices is the best Q in the world.

You guys are ok for a pig but everyone does that.

I will certainly say that I absolutely love west coast Canada. One of my favorite places on earth. But the BBQ is clearly a different style. I like to cook BBQ and do things a little outside of the box too. I do the pig, but do a lot of Asian meets Southern.

Har If we are finished bragging, the best barbecue is the one you are eating right now! .

I have been experimenting with Asian style I used to do grilling and trying to change it over to smoking techniques. I've been very happy with the results.

Welcome aboard! This is a great place to share ideas on smoking, grilling, curing, etc. There are lots of friendly and knowledgeable folks here who really enjoy helping one another. Any time you can't find the answer you're looking for, just ask and someone here will have the answer.

My wife is Korean, so we infuse a lot of that. BBQ pork sticky buns, sesame crusted BBQ pancakes( not the breakfast kind), etc. pretty bad ass. This seems to be a pretty fantastic group. Thanks everyone for the welcome.

....and I've had pretty good Brisket around Franklin, NC, but some of those places in NC love to put cole slaw on their pulled pork.
