Feta Cheese

Over the weekend i made feta cheese from normal cow milk.

it is easy and taste great .

for 4 liter milk you need

1/8 tsp mesophilic culture

1/2 tsp rennet  (mix in 1/4 cup water)

1/2 calcium chloride (mix in a 1/4 cup water )

bring the milk to 30 c 

add the culture and mix

add the calcium and mix 

leave for an hour (maintain 30 c )

add the rennet mix

leave for an hour  (maintain 30 c )

cut the cheese and mix every 5 minuets for the next 15 minuets  .

put the cheese in molds or in a cheese cloth

drain for 6 hours 

rub 3 tsp of salt on the cheese 1 tsp at the time for 3 hours .

let it rest for 18 hours in a cool place .

put in a container and in to the frigid  the fridge   for 6 days if you can  .

Thats so cool Ahron! Have a couple of questions.

1. What kind of milk sis you use? Raw, straight from the cow? Or was it a processed milk like whole milk and pastureized?

2. Do I see correctly? Did you heat the milk in a double boiler set-up?

Hi thanks for your good words

i used normal milk from the shop . it is a problem to buy raw milk in the city.yes i do use double boiler so it keeps the heat .
 
Very nice! Cheese making is on the list of things to play with. I have my Sausage technique going well. Next is a Curing Cabinet for Dry Curing, I have to make a Prosciutto! Then all the Toys to make Cheese...CJ aka JJ's kid
