Ok. So I am preseasoning now and my first smoke will be tomorrow. As I season I set temp to 275 which I thought was the max. As I sit here it is reading 285? How is that possible. It's smoking without wood chips yet which I presume is just the oils from new unit.
 
If you are only reading 10 degrees off you should be thankful. The mes can be off by quite a bit more from my own past experience. I suggest you get a maverick to monitor the temps of the meat and the smoker as the mes meatprobe tends to off too.
 
Thanks. I did buy the maverick 732 but it won't arrive until after my first smoke [emoji]128540[/emoji]. So I am on my own tomorrow. It should be fine though. I'm hoping.

Also I have read online to smoke the entire seasoning but the manual only says last 45 minutes. Any ideas?

When the heat in the smoker reaches the set temp, it shuts off. However the heat will continue to rise for awhile, especially after a long run upward, and a little more in the Summer. I've had mine hit 300* already. It will settle down when it cycles a few short distances.

By the same token, when the temp in the smoker gets 2* below your setting, the element will come on, but the heat in the smoker will continue to drop until the element is on long enough to catch up. This drop is a bit worse in the Winter. You may have it set for 230*, the element will come on at 228*, but the smoker temp will get to 215* before it starts to rise again.

None of this is anything to worry about---It's just the nature of the beast.

Quick question. Every once in a while it kind of hiccups for lack of a better word and a puff of smoke blows out vent hole. Is this normal??
 
Yeah that happens. The chip tray gets really hot and if there's a bit of moisture or a quick flash of chips you'll see that.
