Morning everyone, I had a friend ask me this question and I don't know the answer, so I thought I would toss it out here.

I have been telling a friend of mine about making BBB, so he wanted to try it. He bought a pork butt, cut it into about 3 inch thick slabs, mixed up a brine from Pops brine recipe, that i gave him. He injected the slabs of pork butt and then soaked the meat for 16 days in the brine.

Pulled the meat, rensed and put in the fridge for overnight. Then put into his smoker and did hickory cold smoke for a total straight 24 hours. He did use his Amazn-p for his smoke.

The meat has a fairly strong bitter taste, and I think it is to much smoke.  Is it possable to cold water soak the sliced meat and lessen some of that bitter taste?

Thanks, Rich-

Was he trying to make a ham?

If it's that bad, you may be able to slice a bit off of all sides then re taste.

I agree, I would trim the bacon, getting off that outside layer, then let it set open in the fridge for about a week. It will dry a little but it will mellow alot. I hve little or no first hand experience with over smoking bacon, but that would be what I would attempt had I that problem. Maybe even set it in a cool spot with a fan on it.

This is a reply to all that have answered and sent suggestions about soaking out strong smoke bitterness.

I have talked to my buddie and told him of all your comments and suggestions.

He in turn told me that he had gone ahead and soaked the meat in ice water for a couple hours and it taste way better now. He says it has the texture of very lean Ham and taste very much like ham. He also had sliced all the chunks before he soaked them.

He was trying to do what I do with pork butt, but instead of smoking his for about 12 hrs. like I do he smoked his for 24 hrs. straight and he  used hickory and I use fruit wood. either cherry or applle.

Thanks to everyone for your comments and suggestions, People like you are what makes this forum so valuable to people like me.
