Smoked and Grilled Spatched Cornish Game Hens

I love poultry, Rock not so much, but he does really like Cornish Game Hens. 

Brine:

Heat the following until kosher salt and sugar dissolves.

1 qt homemade chicken stock

1/2 c kosher salt

1/4 c pure cane sugar

1 Tbsp coarse cracked black pepper

2 bay leaves

1 tsp dried tarragon

1 tsp thyme

2 Tbsp Chix Bubba Q Rub (found here on the forum)

1 qt grapefruit juice (normally I use orange juice but didn't have any)

Remove from heat and add 2 qt ice water. Let cool completely before adding poultry.

I let the hens hang out in the pool for 3 hours. Remove them and rinse, pat dry.

Rub with a thin coat of extra virgin olive oil and sprinkled with Chix Bubba Q Rub

Propane smoker was preheated to 240° and added apple and oak for smoke. 

I smoked these to 155° IT in the thigh, then put them on the hot grill for saucing and thigh IT temp of 165°. 

Sauced one with homemade Alabama White Sauce and the other with KC Masterpiece Southern Style.

Looks pretty!  Rock can suffer thru just like Lynn.  AND...love the Alabama White sauce.  Could use it on anything.

That looks delicious, Alesia!  I've never tried Alabama white sauce, just looked up a recipe...it sounds yummy!  I'm putting that on my "to do" list...

Those look great! I tried some Alabama white sauce last week just for fun. Used it as a dipping sauce for some wings and really liked it. I can't wait to try it as a basting sauce in the smoker.

[h4]White BBQ Sauce[/h4]

1 1/2 Cups of Mayo
1/4 cup of white vinegar
1 garlic clove minced
1 Tbs coarse ground pepper
1 Tbs spicy brown mustard
1 tsp sugar
1 tsp salt
2 tsp horseradish

Stir until blended.  Cover and chill 2 to 4 hours before serving.  Store in an airtight container for up to a week.

This stuff is fabulous!  It does not have the big bite of the "horsey" either.  Will be one we have for picnics a bunch in our house! I have used 3 TBS of the horsey and it was even better.

I have tried bunches...some thick and some thin.  Like them all!  Here its usually served with BBQ chickens.

Thanks Kat! LOL yep he suffers tremendously. Asked me when I was going to make Potato Salad (first of all I don't make potato salad cause it just doesn't come out right), so I made some and we ate it, but he said "File it and we'll have it again next summer". Works for me...I really don't like potato salad!

Thanks Red! The white sauce is so yummy on poultry. I tried it on some thighs a while back and figured it would work good on the hens!!! It did taste much better after being in the fridge for a few days.

Moist and tasty birds...nothing better!    Looking delicious!
They were so juicy, I couldn't believe it. We reheated the other halves on the grill the other evening and they were still moist.
