Tracharity, I get them from Albertson's grocery store here in Texarkana.  We have 3 of them...but only one of the butchers will get them for me.  They usually get them in in full racks like this, and then cut them cross-ways for flanken style short ribs.  These are NAMP 130 beef chuck short ribs, they come in racks of four, and are ribs 2-5 on a carcass.  They sell the flanken style very short, maybe 2", short rib packs for $8.98 a pound.  But, they'll sell me the full racks, uncut, for $7.98 a pound, since they don't have to take the time to cut them.  Even though we're talking about Texas, here in NE Texas, people don't know much about beef ribs...so, I can't even find them in butcher shops, as they all cut them across the bone, flanken style...which sucks for barbecuing.  And, what I'd rather have is the NAMP 123A plate short ribs...but they are very hard to find.  They consist of racks of 3, and are ribs 6-8 on the carcass.
